Eggplant Salad

Hello my name is Galina, I’m a wife, mother and grandmother – who loves to cook! Our family enjoys good meals and I love cooking them. In my kitchen I keep Russian-Jewish family traditions. I have tried and created numerous number of recipes throughout the years. I hope your readers will also enjoy my recipe for the Eggplant Salad.

Ingredients:

2 medium size eggplants
1 large carrot
1 large onion
1 red bell pepper
2 celery stalks
2-3 ripe tomatoes
3 cloves garlic
fresh herbs

How to make Eggplant Salad:

1. Wash and trim your vegetables.  Shred carrots and cut other veggies in small cubes.

2.  Saute’ eggplants first separately from your other vegetables with oil and seasoning util tender.

3.  Saute’ other vegetables (carrots, onions, celery) with oil and seasoning until golden and tender.

4. Wash, peel your tomatoes and dice tomatoes.  Crush your garlic and chop your herbs.

5. Combine cooked eggplant, other cooked vegetables and diced tomatoes.

6.  Add crushed garlic, salt, pepper or other seasoning to your taste.  Mix well and saute’ for another 8-10 min,  stirring slowly a few times.

Now your Eggplant salad is done!  It’s a delicious appetizer for every day and any occasions!  Enjoy!
