Zucchini Potato Pancakes with Turkey Bacon and Cheese

This is one of the favorite meals or side to other meals served in our house.  I have many recipes for making these kind of pancakes, but this version was more of a festive dish to be served as an appetizer for a small gathering with friends.

Ingredients:

Ingredients for Zucchini Pancakes
 
1 Medium Zucchini
2 Medium Potatoes
4 Slices of Turkey Bacon
1 Egg
2-3 Table Spoons of Flour
2 Table Spoons of Vegetable Oil
Salt/Pepper to taste

 

Ingredients to Plate with Veggies and Bacon

1 Small cucumber
3 Table Spoons of store bought Tzaziki Dressing
4 Slices of Turkey Bacon
2 Table Spoons of Shredded Parm. Cheese
2 Table Spoons of Balsamic Reduction
Dill and Dabs of Japanese Mayo to Garnish
Freeze Dried Red Onion
 

How to make Zucchini Potato Pancakes with Turkey Bacon and Cheese

1.  Wash your zucchini and trim the ends.  Shred your zucchini on a large shredded and place in a bowl.

2.  Peel your potatoes and microwave them for about 2 minutes  on each side.  Since it takes much longer for potatoes to cook and you will be mixing two ingredients together so your potatoes can’t be raw.  You can also boil them, just let them be a little undercooked and firm.  Once they are done, add them to the bowl of your shredded zucchini along with your egg, flour and add salt pepper to taste.

3.  Mix all the ingredients well until blended.  If mixture ends up having too much liquid just add more flour.

4.  In the meantime heat up your pan, add some vegetable oil and fry the vegetable mixture for about 1 minute on each side, shaping it initially in a pancake form.

5.  In the meantime take out 4 strips of your turkey bacon and fry it on the other pan until cooked.

6.  Then in order to plate our meal cut your cumber in small round circles and lay them around the plate.  In the middle take your pancakes and wrap them around with your cooked turkey bacon and sprinkle with cheese (if you want the cheese melted, once you add cheese put in back in a warm pan and close the lid for few minutes, then transfer back to the plate).

7. Finally add dabs of Tzaziki dressing (these go well with pancakes) and pour some balsamic glaze over cucumbers and around the plate.  Finally add touches of Japanese Mayo and Garnish with Dill.
